The Derby London City, Curio Collection by Hilton joins an existing portfolio of award-winning hotels owned by Dominus and managed by Dominus Hospitality. Opening in February 2026 the hotel will join Hilton's prestigious Curio Collection in the UK, a global set of remarkable upper upscale hotels handpicked for their unique character and personality - each one a part of the fabric of the city it calls home.

About The Role





We are looking for a hands-on and motivated

Assistant Food Beverage Manager

to support the Food Beverage Manager in delivering an exceptional FB operation at The Derby London City. This role plays a key part in leading the day-to-day operation across our restaurant, bar, cafe and events spaces, ensuring high standards of service, quality, and guest experience. You will help prepare the team for launch and then support the smooth running of the operation from day one, acting as a visible leader on the floor and a trusted support to the wider FB team.


Key Responsibilities




Support the Food Beverage Manager in the daily leadership and coordination of all FB outlets. Act as a hands-on leader, leading by example and maintaining a strong presence on the floor. Assist with team training, development, and daily briefings to ensure readiness and engagement. Ensure brand standards, service expectations, and operational procedures are consistently followed. Handle guest feedback and complaints professionally, supporting service recovery and team coaching. Support rota planning, staffing levels, and effective resource deployment. Assist with stock control, beverage GP, wastage reduction, and cost management. Ensure compliance with Health Safety, Food Safety, Allergens, and Licensing requirements. Support revenue-driving initiatives, promotions, and quality score improvement across all outlets.

About You




Proven experience as an Assistant FB Manager or Supervisor within a high-end, multi-outlet hospitality environment. Strong bar experience with a solid understanding of beverage operations. A visible, hands-on leader who enjoys being on the floor and supporting the team. Calm, flexible, and resilient, thriving in a dynamic and evolving environment. Passionate about hospitality, guest experience, and team development. Enthusiastic about being part of a hotel opening and contributing to long-term success.
