About Us



Crust Bros started back in 2014 with one guy, a dream, and a serious love for pizza. Our founder, Joe, swapped the 9-5 office life for the buzz of the restaurant world, jumped on a

plane to Italy armed with nothing but a notepad, an empty stomach and a mission to find the perfect dough. Six weeks (and a lot of pizza) later, he was back in London slinging slices on the streets of Shoreditch -- and Crust Bros was born.

The Role:



As an Assistant General Manager, you will support the General Manager in running the site end-to-end. You will own shift performance, labour control, team development and the overall guest experience.

You will be trusted to confidently step up and run the business in the GM's absence -- making decisions, leading the team and always maintaining standards. This is a hands-on, visible leadership role for someone ready to operate at a senior level and progress into a General Manager position in the future.

What You'll Be Doing:



Support the GM in the day-to-day running of the restaurant Take full ownership of shift performance and team standards Build and manage rotas, manage swaps and approve hours to meet labour targets Monitor and control labour cost % and productivity Lead pre-shift briefings and drive standards throughout service Motivate, coach and develop FOH team members and supervisors Support recruitment, onboarding and probation reviews Oversee cash handling, banking and POS accuracy Monitor guest feedback, reviews, complaints and recovery processes Champion outstanding guest experience at all times Work closely with the Head Chef to ensure FOH & BOH are aligned Ensure full compliance with: Health & Safety Food Safety Licensing Company standards Deputise for the GM when required and maintain clear communication with the wider management team

Who We're Looking For



Proven experience in a senior FOH leadership role such as Assistant General Manager, Deputy Manager or Senior Assistant Manager in a high-volume restaurant Strong commercial awareness and understanding of labour, margin, sales and performance KPIs. A confident, visible leader who sets the pace and standards on shift Excellent communication skills across FOH and BOH Highly organised with strong planning and prioritisation skills A natural coach and developer of people Calm, decisive and solutions-focused under pressure Thinks commercially and sees the bigger picture of the business Anticipates issues before they escalate Actively role-models Crust Bros values and behaviours Ready to step up into a General Manager role within the business
