For our newest Lakeside location, we're looking for an experienced and adaptable Full Time Assistant Head Chef to lead the launch and shape the future of this exciting new site. Key Responsibilities:
Support the Head Chef in the day-to-day running of the kitchen within a Japanese restaurant, ensuring high standards of food quality, consistency and presentation.
Assist in the preparation, cooking and execution of Japanese dishes in line with brand recipes and specifications.
Help train and guide the kitchen team on Japanese cooking techniques, knife skills, food preparation and presentation standards.
Supervise kitchen operations during shifts in the absence of the Head Chef, ensuring smooth service and adherence to procedures.
Maintain high standards of food safety, hygiene and cleanliness across all kitchen areas.
Support stock control, ordering, portion control and waste management to help meet food cost targets.
Assist with kitchen rota planning and ensure adequate staffing levels during service.
Work closely with the Head Chef and wider management team to support overall operational and commercial performance.
Skills & Requirements:
Previous experience as an Assistant Head Chef, Senior Sous Chef or Sous Chef,
preferably within a Japanese restaurant or Japanese cuisine-led concept
.
Good working knowledge of Japanese ingredients, cooking methods and kitchen practices.
Strong organisational skills with the ability to perform well in a fast-paced, high-volume environment.
Confident communicator with emerging leadership skills and the ability to support and motivate a kitchen team.
Good understanding of food safety, health & safety and hygiene standards.
Willingness to learn, develop and refine Japanese cooking techniques.
Flexible approach to working hours, including evenings, weekends and peak trading periods.
Passion for food quality, consistency and Japanese cuisine.
