The EarthSpirit Centre is a busy, award winning, holistic venue, for groups specialising in personal development and complimentary therapies. Set in seven acres of rolling countryside some five miles to the south of Glastonbury.
This position offers the rare opportunity to live on-site in a spacious mobile home (pay is 13ph on-site; or off-site 13.50ph on-site). Occasional access to the spa is included along with your meals when working in the kitchen.
What else is different? Well, you don't work from a set menu but rather create delicious vegetarian food from scratch each day - depending on what's seasonally available and perhaps to the general likes of the groups who come to the centre. So you may create a soup and three different salads for example that can be shared by 30 or 40 people, while ensuring that any special diets are also catered for. Every day is different. Having a spiritual background or practice is encouraged but is not a necessity for the role, as long as you are positively-minded about personal development and spirituality.
As the kitchen's Assistant Manager you'll be preparing, serving, and occasionally cleaning away meals for the attending groups and supervising kitchen assistants and helpers. The role includes the organisation of the department and occasional liaising with groups, maintaining health and safety procedures, and ordering and taking delivery of food as well as being aware of what we are growing.
Hours are flexible (typically 24 to 36 hours a week, and typically working around 4 days in 7) to be arranged with the Kitchen Manager. Some days may involve a longer mid afternoon break (around 2 hours) if working in the evening also include some weekend work. Work hours rarely go past 8pm.
Whilst there is often plenty of time to prepare each meal you need to be capable of working under pressure when things change, to be organised and efficient in your food preparation. Ideally you'll have experience of cooking for groups of 30+ .. and larger groups (50+) would also be a benefit. Additional hours may be required during busy periods and when the kitchen manager is away when your role will be to cover for the kitchen manager - typically for a week or two. This is a great opportunity for anyone who has led small teams and wants to gain more experience in management.
Specific Duties include:
- Assisting with Health and Safety procedures/monitoring, ensuring high standards are met
- Meal planning.
- Leading the kitchen (chef); acting as a kitchen assistant/support where another chef is leading, cooking for small and large groups
- Running the kitchen logs, ordering, stock checks, taking deliveries and organising rotas in conjunction and as determined by and in support of the kitchen manager
- Attending meetings when requested to, or in replacement of, the kitchen manager
- Replenishing self-catered food and drinks for groups
- Ensuring the smooth running of the kitchen with the kitchen manager
- Ensuring effective team work with the kitchen staff and casuals, supporting others working in the kitchen and catering areas including volunteers.
- Liasing with groups ahead of their arrival at EarthSpirit and occasionally afterwards
- Experience of providing for various dietary requirements and allergies.
- Occasionally covering Point of Contact duties - (ensuring clients are happy and satisfied while they are with us) - only when not running the kitchen.
Required qualifications & experience:
Food Hygiene - Level 2 or 3 (Level 3 can be taken with us if required)
Has worked in a commercial kitchen
Full UK Driving licence - or equivalent
Fluency in English language (proficient in speaking and writing)
