Job Purpose

To serve all food and beverage in the Drawing Office Two outlet as required by hotel standards. Maintain overall levels of courtesy, service and cleanliness of the Bar and Lounge areas.

Main Responsibilities/Key Tasks

  • To assist the Drawing Office Two Bar Manager in ensuring that the team gives exemplary hospitality to the guest at all times.
  • Ensure orders of food and beverage are served promptly in accordance with hotel standards.
  • To ensure all stock levels for food and beverage are held at the required level and that adequate mis-en-place is available for each shift in the bar.
  • To ensure liquor control is strictly maintained at all times and all ullage, transfers and requisitions are correctly completed as per hotel standards.
  • To ensure that the team are fully conversant with systems and supervise the collection of all monies and ensure that all guest bills are posted correctly.
  • To produce and ensure that the team work to an agreed rigid cleaning procedure.
  • To ensure the team adheres to the correct opening times and that procedures are followed.
  • To ensure the Bar area is maintained to the highest standards of cleanliness and tidiness.
  • Ensure that the team act upon all up selling opportunities within the Bar/Lounge through encouragement and incentivising.
  • To report all maintenance faults to the Maintenance Department, and follow the remedy through.
  • To carry out Duty Management functions as required.
  • To ensure that all standards relating to security are maintained with emphasis on the following:
Liquor Stocks;

Hotel Equipment;

Bar Keys;

Bar Floats;

Bar Glasses.
  • To build a consensus and negotiate mutually beneficial solutions to problems.
  • Establish and maintain strict security procedures within your department, reporting any potential risks to the Operations Manager.
  • Display a pro-active and consistent approach to stock control, cost control and cash control.
  • To display a pro-active and innovative approach to skills development and standards enhancement with your team.
  • Ensure communication procedures are effective and efficient on a day to day basis, so that service standards are not compromised.
  • Accurately assess the needs of the business in terms of staffing etc. providing solutions to identified risks in line with trading levels.
  • To ensure each new member of the team receives a departmental induction within their first week and attends a company orientation within their first four weeks with the company.
  • To carry out appraisals/job chats as per the company appraisals system.
  • To be fully conversant with disciplinary procedures and all other relevant human resources practices e.g. sickness/absenteeism.
  • Ensuring recruitment, training, development and staffing levels are as required, whilst demonstrating a management style that is both \xe2\x80\x98hands on\xe2\x80\x99 and strategic.
  • Continuously analyse actual standards observed against department standards. Demonstrate a pro-active approach to delivering company and operational standards and actively challenge deviation.
  • To be able to act with initiative, planning for the future and possible consequences. Being pro-active in getting things done and exceeding expectations of both guests and colleagues where possible.
  • To develop interactive customer relations and to be aware of any possible future requirements. To relay such information and ideas to the Drawing Office Two Bar Manager, and Deputy General Manager for the enhancement of customer expectation.
  • To support with initiative and commitment the overall objectives of the business in terms of, revenues, costs and team work \xe2\x80\x93 whilst developing your personal competency levels.
  • To attend and contribute to all daily/weekly team meetings.

  • To have a thorough knowledge of and adherence to the law with regard to the following company regulations:
Licensing Laws;

Health and Safety Regulations;

Food Handling & Hygiene Laws;

Fire Regulations and Procedures;

First Aid Procedures.
  • To be a good example of the company dress code and appearance standards \xe2\x80\x93 ensuring that your team fully comply with these.
  • To undertake special duties or work outside the normal daily/weekly routine but within the overall scope of the position at the request of the Drawing Office Two Bar Manager, Deputy General Manager/General Manager.
