The day-to-day management of 1 Lombard Street, a 120-cover restaurant with two private dining rooms and a sales turnover in excess of 120,000 per week.

Operations, Financial & Reporting



Assume responsibility for the Front of House operations during shifts. Control bar operations in line with company procedures, including ordering, stock accountability, stock takes, price changes, movement reports, and the development of the 1 Lombard Street bar offering within budget requirements. Develop 1 Lombard Street's status as one of London's great independent restaurants, maintaining the highest standards of seasonality, artisan, and ethically sourced produce, with high-end service at mid-market prices. Ensure maximum revenue and profit from all sales opportunities across People, Place, Promotions, and Product, thinking creatively without compromising business integrity. Ensure rotas are up-to-date, departments are closed at the end of each day, and sales figures are updated. Act in accordance with feedback from the GM/HC Audit. Monitor feedback on dishes and drinks, customer feedback, and senior staff feedback through tastings and awareness of online feedback. Present common feedback as part of your end-of-night report. Monitor and report on weekly variable costs.

Recruitment, Learning and Development



Maintain and drive the highest standards of staff product knowledge through regular training sessions, sourcing trips, targeted and documented feedback, tastings, informative shift briefings, and kitchen engagement. Be fully conversant with our menu, cooking techniques, supplier information, and ethos. Be an expert on our product--engage with prep shifts and the waiter prep programme to foster a deeper understanding and celebration of our unique cooking practices and ingredients within the team. Conduct appraisals and provide feedback to keep all staff engaged and engaging. Ensure that Front of House performance notes are kept by all managers and prioritise progression processes, encouraging waiters to learn new skills and seek promotion. Ensure newly promoted individuals receive a proper "promotion ceremony", introducing them to their peers in their new role and celebrating their success. Contribute to targeted weekly management training and meetings. Drive the recruitment of new employees in the restaurant. Address disciplinary issues and seek advice from HR when necessary. Lead and motivate a team of staff in a positive and engaged manner, creating a culture that encourages the highest standards of professional behaviour.

Legal, Health & Safety



Ensure adherence to the Company's Health & Safety policy at all times. Contribute to the safe running of the business through adequate training and detailed opening and closing walk-rounds, which are monitored and fed back to senior management and chefs. Monitor and act on feedback related to In-House H&S Audits. Ensure all potential and real hazards are reported to the GM and/or HC. Be fully conversant with all departmental Fire, Emergency, and BOMB procedures--compile attendance records and encourage your team to provide for the security and safety of guests and employees. Ensure the team is aware of their responsibility regarding fire prevention and action in accordance with the Restaurant's fire plan and current legislation. Ensure the safety of persons and property within the premises by strictly adhering to company policy, anticipating possible hazards, and informing the GM and/or HC. Stimulate and encourage general awareness of Health and Safety in all departmental tasks and activities.
