Trancio is an independent artisan pizza, coffee, and bakery venue in the heart of Conwy. We specialise in freshly made, slow-fermented doughs, handcrafted pastries, and high-quality bakes prepared on site every morning. We are looking for a

passionate and reliable Baker

to join our growing team. This role is perfect for someone who enjoys early mornings, takes pride in consistent craftsmanship, and thrives in a small but energetic independent kitchen. You will play a key role in producing the doughs and baked goods that underpin the Trancio brand.

What the Role Involves

As our Baker, you will be responsible for:

Preparing and baking a variety of products daily, including pizza doughs, breads, pastries, and specials Managing fermentation schedules, dough proofing, shaping, and oven baking Consistently following recipes and maintaining high-quality standards Ensuring all baked items are fresh, well-presented, and ready for service each morning Operating mixers, ovens, and bakery equipment safely and confidently Maintaining excellent hygiene, cleanliness, and organisation in the bakery area Completing daily temperature checks, cleaning logs, and labelling Supporting stock rotation, ingredient ordering, and waste reduction Working collaboratively with the Head Baker, Cook, and Head of Coffee to support smooth daily operations Occasionally contributing creative ideas for new pastries, dough variations, or seasonal specials

About You

We are looking for someone who is:

Experienced in bakery or dough production (professional or high-level home baking considered) Passionate about artisan baking, fresh ingredients, and consistent quality Calm, organised, and comfortable working independently in the early morning Precise with recipes and timings, with strong attention to detail Hygienic, safety-conscious, and confident with food handling Friendly, positive, and eager to be part of a small, supportive team
Food Hygiene Level 2 (or willingness to complete it) is required.

Working Hours

Saturday and Sunday, 6:00 am - 1:00 pm

Option to increase hours Occasional flexibility required for busy seasons, events, or additional prep days
