We're looking for a
Butcher / Meat Prep Specialist
who understands meat on a professional level -- someone who can trim, portion, and prepare with confidence, consistency, and respect for the craft.
You'll handle daily prep for our grill section, ensuring that all cuts are clean, uniform, and ready for service. You should have the skill to break down and prepare various cuts efficiently, create mince with the right texture, and help maintain the high standard our dishes are known for. Inspection of all incoming meat deliveries from suppliers to ensure quality, freshness, correct trimming, and that all products meet our restaurant's standards before accepting them is crucial.
A solid understanding of marination, seasoning balance, and texture is highly valued, as is the ability to work closely with the grill chef to keep service running smoothly.
RESPONSIBILITIES
Prepare, trim, and portion meats to a high professional standard.
Produce minced meat with correct texture and consistency for various dishes.
Ensure all meat is prepped, labelled, rotated, and stored safely.
Apply marinades and seasoning mixes accurately and consistently.
Support the grill station with properly prepared cuts throughout service.
Maintain a clean, organised, and efficient prep area at all times.
Follow food safety, hygiene, and allergen procedures with full attention.
Assist with general kitchen prep where needed to support the team.
Communicate effectively with chefs, grill team, and management.
Uphold high standards during peak hours and fast-paced service.
Essential Hygiene and food safety level 2 certification
SKILLS & EXPERIENCE
Strong knife skills and professional meat-handling experience.
Understanding of meat textures, fat ratios, trimming, and prep for grilling.
Familiarity with Turkish or Middle Eastern cooking styles (preferred but not essential).
Ability to work quickly without compromising consistency or safety.
Experience working in a structured kitchen environment.
Good understanding of marination techniques and flavour development.
Knowledge of food hygiene, cross-contamination prevention, and allergen awareness.
Ability to follow recipes, ratios, and preparation standards accurately.
Strong time management and ability to organise prep based on service needs.
