Job Summary



Donnington House Care Home is a registered charity that has been providing care for older people in Chichester, West Sussex since 1952. The Home is registered to give care, both Residential and Nursing, to 27 residents.

We are seeking a talented and passionate Chef to join our kitchen team. The ideal candidate will have a strong culinary background, experience working in a care home environment and be able to create exceptional food that delights our residents.

As a Chef, you will be responsible for overseeing food preparation, ensuring high standards of food safety, and specialised diets for our residents.

Duties



To provide home cooked nutritious and attractive meals suitable to the service users of the Home. To ensure that food received into the Home is of good quality and cooked and stored in a safe hygienic way. To provide special diets when requested to do so by the Manager, her deputy or the qualified nursing staff. To be confident in preparing and serving meals in the IDDSI diet. To be able to prepare and serve meals taking into consideration of the14 allergen. To provide liquidised or specially cooked food for the residents when requested to do so by the Manager, her deputy or qualified nursing staff. (Meat and vegetables to be separately liquidised and presented in an attractive way.) To use fresh vegetables and meat where possible. To provide a selection of home baked cakes daily. To provide separate cakes and desserts suitable for diabetics on a daily basis. To provide and prepare light supper meals to serve to the residents. To provide meals for staff, whilst they are on duty, including breakfast. Plan and prepare rotating menus as required, for different times of the year taking into consideration preferences of the Home's elderly residents and at all times, ensure a healthy and balanced diet for the residents. To display a menu, for breakfast, lunch and supper, on a board in the dining room each day, To consult residents on a regular basis to ascertain their satisfaction and preferences regarding meals. To regularly consult the qualified nursing staff regarding suitability of meals for individual residents and to fortify and supplement meals when requested to do so. Control the purchase of food and certain domestic items within the budget allowed. To ensure that the storage of food is rotated and used in date order, stored correctly according to manufacturer's instructions and EEC regulations. To exercise due diligence in the purchase, transport, storage and cooking of meat and fish. Record temperatures of food received into the Home and when being cooked. Carry out Risk Assessments and monitoring as required by the Authorities and Regulators. To keep and maintain all records required by the Authorities and Regulators Ensure that all food supplied, is in accordance with residents needs. E.g. vegetarian, diabetic, low fat, liquidised etc., Ensure that the upkeep safety and standard of hygiene in the kitchen is high, and preparation areas are hygienically maintained to the required level of the Care Quality Commission and Environmental Health authorities. Remembering that the Chef has overall responsibility for the whole of the kitchen area including servery, to ensure all equipment is maintained in a satisfactory state of cleanliness and hygiene. To supervise instruct and teach where necessary, Weekend Cook, Supper Cooks and kitchen assistants and ensure that their duties are carried out satisfactorily. To report any problems or difficulties to the Head Chef and Manager. To undertake training, when requested to do so by the Head Chef and Manager. To be aware of the Health & Safety at Work statement, COSHH Regulations and to take all precautions as directed. To attend Fire Drills, Health & Safety lectures, staff meetings and other compulsory training when requested to do so by the Manager. To be aware of the Complaints Procedures and other non-nursing Procedures.

Experience



Proven experience as a Chef or in a similar culinary role within a care or nursing home. Strong knowledge of food preparation techniques, specialised diets and food safety standards. Ability to work efficiently under pressure. Excellent communication skills and the ability to work collaboratively within a team. A passion for cooking and creating great food for our residents to enjoy

15.98

Weekend Rate +30%

Bank Holiday Rate +50%

HOURS



08.00-18.00 per day

40 hours a week

4 week rolling rota

Week 1 - Monday, Tuesday, Saturday and Sunday

Week 2 - Tuesday, Wednesday, Thursday and Friday

Week 3 - Monday, Tuesday, Saturday and Sunday

Week 4 - Tuesday, Wednesday, Thursday and Friday
