The Hertsmere is entering an exciting phase of growth, with Script: Restaurant & Bar leading the way in delivering exceptional dining experiences. We are searching for a talented and ambitious Chef de Partie to join our dynamic kitchen team. This is an amazing opportunity to work alongside our newly appointed Head Chef and an experienced Sous Chef, developing your skills in a high-quality, fast-paced kitchen. As a key member of the brigade, you will play a crucial role in menu execution, kitchen operations, and maintaining high culinary standards.

Role Overview



As Chef de Partie, you will take responsibility for a designated section of the kitchen, ensuring all dishes are prepared to the highest standard. You will work closely with the Sous Chef and Head Chef to deliver exceptional food while maintaining a clean, organized, and efficient workspace.

Key Responsibilities



1. Kitchen Operations & Food Preparation



Manage a specific section of the kitchen, such as grill, sauce, larder, or pastry. Prepare, cook, and present dishes to the highest standards. Assist in the development of new menu items, bringing creativity to the kitchen. Ensure all food is prepared on time and meets portion control standards.

2. Teamwork & Leadership



Work closely with the Sous Chef and Head Chef to maintain a smooth kitchen operation. Assist and mentor junior chefs, ensuring they meet high standards. Communicate effectively with the wider kitchen and front-of-house teams.

3. Health, Safety & Hygiene



Follow all food safety and hygiene regulations, ensuring the highest cleanliness standards. Keep your station clean and organised at all times. Ensure proper storage, labelling, and stock rotation to minimize food waste.

4. Stock & Cost Management



Monitor stock levels and inform senior chefs when reordering is required. Assist in minimizing waste and managing portion control. Follow recipes and portion guidelines to maintain cost efficiency.

What We are Looking For



Essential Skills & Experience



Previous Experience:

At least 1-2 years as a Chef de Partie or Commis Chef in a quality restaurant, hotel, or leisure venue.

Culinary Passion:

A genuine love for cooking and delivering outstanding food.

Attention to Detail:

Ability to consistently produce high-quality dishes.

Organization & Efficiency:

Ability to work cleanly and efficiently in a fast-paced environment.

Adaptability:

Comfortable working under pressure and managing a busy service.

Food Hygiene Knowledge:

Level 2 Food Hygiene Certificate (or willingness to obtain).

Desirable Attributes



Experience working with fresh, locally sourced ingredients. Previous exposure to menu development and new dish creation. A keen interest in modern cooking techniques and plating styles.
