With exciting plans for operational growth and strategic development, we are recruiting a experienced Chef De Partie to join our kitchen team.
The Crab House Cafe is a longstanding, award-winning, single AA rosette seafood restaurant and oyster farm in Weymouth, Dorset overlooking Chesil Beach. We are family-run, with a strong family ethos in our business.
We change our menu twice daily, specialising in seafood, crabs to crack, and oysters, farmed metres from our tables. Sustainability is at the core of everything we do, encouraging diners to try underutilised fish and promoting the most sustainable fishing methods throughout our menu. We forage along the coastline and grow various produce in our kitchen garden.
Are you the right person for us?
Experience within this role and a similar restaurant environment
You will be experienced with a wide variety of fish and passionate about seafood and shellfish
You will need to demonstrate the ability to manage the kitchen, inspire creativity and be highly organised
You must display a passion for utilising the best of local produce, fresh ingredients, and seafood
You will display professionalism and a positive attitude towards growth and development, as well as deliver and maintain excellence
You will need a passion for high standards and experience in high-volume service
You will be a great communicator and be serious about working in a professional environment
What will your role as a Chef De Partie look like?
Controlling and overseeing all food preparation for service
Collaborating with our kitchen team to construct our daily food menu and develop current dishes
Portion control, controlling wastage and delivering consistent quality
Stock management
Completion of company H&S procedures and document auditing
Support the Sous and Head Chef in service within a fast-paced and pressured environment, and maintain standards at all times
Positively represent the company and demonstrate core values
Lead junior kitchen team members through service
