We're looking for friendly, reliable team members to join the crew at
Fred's Backyard Barbecue
, serving up authentic low-and-slow smoked meats at
Edinburgh Street Food
.
You'll be part of a small, tight-knit team focused on delivering amazing BBQ and great customer service in one of the city's busiest street-food venues. You'll be hands on in every part of the operation - from prep and plating to managing the smoker and ensuring every dish leaves the pass at its best.
Work across both kitchen and service areas
, supporting food prep, cooking, plating, and customer service during busy periods.
Operate and maintain our traditional offset smoker
- learning the fundamentals of fire and temperature management using real hardwood.
Monitor cook times and temperatures
for brisket, pork belly, chicken and other smoked meats to ensure consistent quality and texture.
Assist in food preparation and cooking
, including portioning, assembling BBQ plates, and maintaining high presentation standards.
Maintain strict food safety and hygiene standards
- following correct handwashing, sanitisation, cross-contamination controls, and colour-coded systems.
Carry out and record temperature checks
for cold storage, cooking, and hot-holding as part of our HACCP process.
Demonstrate good allergen awareness
- understand our menu and confidently advise customers on allergens and dietary requirements.
Keep the kitchen and service area clean, stocked, and organised
between shifts.
Follow systems and procedures
to ensure consistency and efficiency, supporting the team during prep, service, and close-down.
Communicate effectively with the rest of the crew
and take direction from shift leaders or management during service.
What We're Looking For
Essential:
Previous experience of at least 1 year in a commercial kitchen or fast-paced food service environment.
A
good understanding of how to cook
- how heat affects food, the importance of timing, and maintaining quality under pressure.
An interest in
barbecue and open-fire cooking
- we'll teach you fire management and the art of running our offset smoker.
Food safety and hygiene awareness, including allergen control and temperature recording.
Strong teamwork, communication, and reliability.
Flexibility to work a mix of
weekday and weekend shifts
.
Food Hygiene Level 2 (or willingness to complete before starting).
Hours & Pay
Part-time:
15-20 hours per week (flexible shifts available)
Competitive hourly pay based on experience
Typical shifts run between 11am - 9pm
