Job Overview


We are seeking a motivated and experienced Kitchen Team Leader to oversee daily operations across the Korean/Japanese kitchen, with a focus on maintaining exceptional food quality, coordinating service flow, and ensuring an organised and efficient working environment. Candidates with previous sushi chef experience are preferred and will lead the sushi and Japanese hot-food sections, supporting the Korean section as needed.

The ideal candidate is confident in calling out orders, managing ticket flow, and guiding the team to deliver consistently high-standard dishes in a fast-paced setting. This role requires strong leadership, excellent organisational skills, and a thorough understanding of Japanese and Korean culinary techniques.

Duties



Lead and supervise kitchen staff, including cooks, chefs, and service personnel, ensuring efficient workflow and high standards of food quality. Call out orders clearly and confidently to ensure smooth communication between sections. Oversee food production, preparation, and presentation to meet established quality standards. Manage daily kitchen operations, including inventory control, stock rotation, and ordering supplies as needed. Ensure compliance with food safety regulations and hygiene standards at all times. Coordinate with front-of-house teams to ensure timely service and customer satisfaction. Provide training and mentorship to team members to develop their culinary skills and knowledge. Assist in menu planning and development Handle customer feedback professionally, resolving any issues promptly to maintain positive guest experiences.

Experience



Previous experience as a Sushi Chef or in a Japanese/Korean kitchen environment. Excellent kitchen organisation, time management, and multitasking skills. Familiarity with managing teams, delegating tasks effectively, and motivating staff towards shared goals. High attention to detail with strong food quality and presentation standards. Solid understanding of raw fish handling, HACCP, UK food safety and allergen regulations.
Job Type: Full-time

Pay: 35,000.00-40,000.00 per year
