Okko is a chilled neighborhood sushi bar and izakaya in East London. Our menu combines sushi, sashimi, and Japanese comfort dishes with a creative twist, including customer favourites such as bold, flavour-packed ramen, signature rolls, and tacos. We have been open for 10 years, and currently run 2 locations. We're looking for an experienced Section Chef to join our fast-paced kitchen at Okko Broadway Market. You'll be responsible for preparing and delivering some of our most popular dishes during busy services -- maintaining consistency, speed, and quality throughout every shift. You'll need to be confident working both independently and as part of a team, keeping your section clean, organised and fully prepped.
Duties
Prep, cook and present all dishes at their best, ensuring consistency, speed and quality.
Ensure the freshness and quality of ingredients, maintaining the highest food safety standards.
Manage inventory, including ordering and restocking supplies as needed.
Collaborate with the kitchen and floor teams to deliver a smooth and memorable dining experience.
Maintain cleanliness and organisation of prep and service areas at all times.
Take direction from senior chefs and contribute to a positive kitchen culture.
Adapt and respond to a fast-paced, high-pressure service with a positive and solutions-oriented mindset.
Requirements
Good knowledge of Japanese cuisine with previous experience working in a fast-paced Japanese restaurant.
Minimum of one year's experience as Chef de Partie (or similar roles) in a Japanese cosine restaurant.
Knife skills and knowledge of sushi preparation techniques are a bonus.
Strong attention to detail and ability to stay calm and focused under pressure.
A positive, proactive attitude with a team-first approach.
Food Safety Level 2 certificate (or willingness to complete).
Availability to work flexible hours including evenings and weekends
