Full-time - Variable (34 hours per week average - up to 48 during summer and 20 in winter)

Start Date:

Salary:

27,000-30,000 paid weekly

Salary depends on experience and requirement for company vehicle.

Role Overview



The Chief of Operations (COO) is responsible for the day-to-day operational leadership of The Cheeky Tipple cocktail bar company, encompassing our town centre venue, seasonal beach bar, and mobile bar operations. This role ensures operational excellence, brand consistency, profitability, and compliance across all sites while supporting growth, innovation, and exceptional guest experiences.

The COO will act as the operational backbone of the business--translating vision into execution and ensuring each venue and service operates efficiently, safely, and profitably.

The purpose of this role is top alleviate the operational reliance on the Managing Director.

Key Responsibilities



Pre-requisite

This role is not an admin only role and will require bartending.

Operational Leadership



Oversee all daily operations across the town centre bar, beach bar, and mobile bar services Ensure consistent service standards, brand presentation, and guest experience across all operations Develop and implement operational policies, procedures, and best practices Lead seasonal transitions (e.g. beach bar setup/close-down, peak trading periods, events)

People & Performance Management



Recruit, train, and manage team leaders/key operational staff Set performance targets and conduct regular reviews Foster a positive, high-performance culture aligned with the brand values Oversee rota planning, staffing levels, and labour cost controls Oversee Marketing Manager, Head of Product & Training, up to 10 multisite bar staff in peak times. Build relationships with current external stakeholders such as security, musicians, cleaners, tradesmen, licensing and of course our loyal customer base

Financial & Commercial Management



Understand commercials and control cost across all venues Monitor KPIs including revenue, margins, stock variance, labour costs, and guest satisfaction Identify opportunities to increase profitability through efficiency, pricing, and product Work closely with Managing Director to ensure accurate reporting

Stock, Supply Chain & Systems



Oversee purchasing, supplier relationships, and stock control across all sites Implement systems to minimise waste and manage seasonal stock requirements Ensure mobile bar logistics (transport, equipment, stock, staffing) run smoothly

Compliance, Health & Safety



Ensure full compliance with licensing laws, health & safety, food hygiene, and local authority requirements Oversee risk assessments for venues, beach operations, and mobile events Maintain all operational documentation and certification

Brand, Growth & Strategy



Collaborate with the MD on business strategy and expansion opportunities Support new venue launches, pop-ups, and mobile bar events Ensure brand consistency across physical venues, events, and customer touchpoints Act as the senior operational representative with partners, suppliers, and stakeholders

Skills & Experience



Essential



Must be a driver. You will not be interviewed if you haven't had a valid drivers license for at least 1 year. No amount of experience will make this negotiable.

We are a practionioner led business. A bar company owned and run by bartenders. 3+ years of bar experience (preferably cocktail bartending) essential.

Proven operational leadership experience in hospitality (bars, restaurants, or events) Strong understanding of multi-site and seasonal operations - foresight to prevent issues that may occur at multiple locations simultaneously. Excellent people management and leadership skills Solid commercial acumen understanding of margins, marketing ROI & staff cost In-depth knowledge of licensing, health & safety, and hospitality compliance Highly organised with the ability to manage multiple workstreams

Desirable



Experience with mobile bars, events, or pop-up hospitality Experience scaling or growing a hospitality brand Familiarity with stock, rota, and POS systems Personal licence holder (or very experienced and able to obtain)
