Main purpose of role



The purpose of the role of Cook is to manage the preparation and the delivery of meals, providing delicious food and understanding the importance of independence and choice for residents. As a rehab service we try and promote independence as much as possible, so there is only one main meal provided for them each day. The other meal is prepared by the people themselves. You will be expected to cook and serve one main meal each day, and ensure that there are appropriate ingredients for people to prepare themselves light meals in line with the food menu.

As part of the rehabilitation program, there is an exciting opportunity to work with the service to develop a pathway in which we can encourage and grow the people we support involvement within the kitchen environment.

You will be responsible for ordering, purchasing, preparing, cooking and delivery of the food. Must be able to offer suitable changes to the weekly menu as required in association with the manager and feedback from residents, ensuring that any special dietary requirements are catered for. You will also be required to maintain records and comply with environmental health standards.

Duties and responsibilities



To produce dishes in line with agreed menus to the required standards To comment on and where possible contribute to menu planning and service development To maintain food safety, cleanliness and hygiene standards within the department and ensure that all work is carried out in line with Health and Safety and organizational policies and procedures to ensure safe working practice To understand and keep abreast of Food Standards Agency legislation and best practice guidance and to record statutory food safety records evidencing required food hygiene and infection prevention and control measures. To have an understanding of safe practice concerning allergens. To maintain portion control, stock ordering and ensure all operational practices are undertaken to budgetary constraints To store goods correctly and use stock on a rotational basis to minimise food wastage To correctly use and take care of all equipment and materials associated with tasks and immediately report any faults to the hospital manager Ensure that professional knowledge and competency is maintained through undertaking mandatory training and other training for the role Participate as a full member of the team, e.g. supporting and training other staff, participating in team meetings, working flexibly as required to cover other members of the team. Undertake other ad hoc duties as prescribed by manager and within scope of skill and capability To be able to work within a budget

Communication and working relationships



Participate as a full member of the team, e.g. supporting and training other staff, participating in team meetings, working flexibly as required to cover other members of the team. Supervise and mentor other staff as required for their development and effective running of the kitchen. To provide a friendly, efficient and courteous service to all our supported people To report to Hospital Manager

Personal specification

Qualifications and training



NVQ 2 Catering and Hospitality (Food preparation and cooking). Candidates who do not hold the essential qualifications must be willing to acquire them once in post- Essential Basic Food Hygiene- Desirable Intermediate Food Hygiene- Desirable

Knowledge



Safe working practices, safe food hygiene practices and safe personal hygiene practices.- Essential Dietary and cultural requirements- Desirable The importance of portion control- Desirable

Experience



To have provided catering in a commercial setting on either paid or voluntary basis- Essential Carrying out monitoring checks- Essential Planning menus- Essential Controlling stock- Essential Involvement with mental health client group- Desirable

Skills and Abilities



Communication skills:



Able to communicate with managers, staff and service users- Essential Able to work as part of a team- Essential

Planning and organisational skills:



Planning menus- Essential Organising work routine for self- Essential Controlling Stock- Essential

Physical skills:



Able to prepare and cook a full range of meals to meet the needs of the service users.- Essential Cleaning skills including washing up and general kitchen cleaning routines- Essential
