Main duties and responsibilities





In this role you are expected to:


Be fully conversant with all Restaurants, Bar, Floor Service and Banqueting menus with regard to the particular items relating to your designated section.



Assist in the production of food within your designated section.



Ensuring that food preparation is of the highest standard using the finest ingredients at all times.



Ensure that portion control is maintained in accordance with company guidelines, laid down with the Executive Chef.



Ensuring good rotation of stocks and the correct storage and labelling procedures are followed.



Ensure that the appropriate amount of mis-en-place is kept in stock.



Advise Sous Chef of any commodity needing immediate use or attention.



Ensure correct procedures are used, particularly in the preparation of High risk commodities. Encourage communication regarding food service, especially when highly individual and personalised service is demanded from our clients.



Ensure that maximum effort is given to achieve an efficient service whilst maintaining the highest possible standards.



Ensure that all recipes of any new dishes are immediately recorded and submitted to Sous Chef and support any tests which may be necessary to achieve accurate costings.



Deputise and run section efficiently and effectively in the absence of the Chef de Partie / Sous Chef.



Supervise commis chefs, apprentices and trainees within your section, making sure that they are properly dressed to the standards set by the Executive Chef.



Maintaining discipline in a fair and consistent manner, including timekeeping, reporting breaches to the Chef de Partie / Sous Chef.



Identify any special training needs within your section and to put any recommendations forward to Chef de Partie / Sous Chef.



Assist Chef de Partie / Sous Chef to carry out on the job training for staff within your section.



Encourage and motivate staff within your section.



Maintain high standards of personal hygiene, good grooming standards and that the cleanliness of lockers, showers/toilets and changing rooms are maintained to the required standard of the hotel.



Initiate areas of opportunities to improve the profitability of the Kitchen operation.



Controlling the wastage of food.



Being responsible for economy of utilities, such as use of gas, electricity and water.



Maintain effective communication between Kitchen and other Departments within the hotel, paying particular attention to Restaurant, Floor Service, Bar and Banqueting Departments.



Attend meetings, courses/lectures as directed by Executive Chef.



Ensure that all refrigerated areas are kept clean and temperatures are maintained at correct levels and recorded in the correct manner.



Liaise with Back of House Department, ensuring that all Kitchen areas and equipment are clean in accordance with the Hotels Hygiene Regulations.



Ensure that all Kitchen equipment is safe and in perfect working order and that staff using it are fully trained conform to our Health and Safety Regulations.



Ensure that any faulty equipment is reported and recorded in the correct manner.



Complete daily cleaning duties and sign off the cleaning /daily checklist before the end of each shift
