Responsibilities
Assist the Head Chef and other Senior Chefs in the organisation and controlling of all kitchen operations as requested.
Ensure the effective delivery of the either a la carte, buffet breakfast and assisting with the Meeting & Events offerings to ensure the highest standards of food quality are achieved and the timely delivery to the guest.
To ensure healthy options are provided and maintained for the Staff Restaurant. To be able to create a staff menu which a can be rotated monthly with the assistance of HR and Head Chef.
Ensure that the brand standards of product preparation and quality are adhered to and delivered on a consistent basis.
Effectively plan and manage the product ordering for the breakfast service to ensure optimum stock levels at all times and menu item availability at all times for the guest.
Ensure effective organisation of the breakfast service to consistently deliver quality plated breakfast regardless of volumes.
Ensure that brand standards of product preparation and quality are adhered to on a consistent basis.
Maintain a high level of food presentation and preparation on any section, under clear guidance.
Work competently and effectively to ensure the delivery of the standards specified by the Head Chefs/Senior Chefs.
Adhere to the Company Food Safety Policy at all times in the preparation and delivery of all food and ensuring the cleanliness of the kitchen at all times.
Continually develop and build ingredient and food preparation knowledge to improve delivery of food and presentation of food under the guidance of more Senior Chefs.
Ensure the kitchen is always clean, tidy and hygienic following company standards and procedures.
Embrace and show a willingness to learn and develop when given training, development and coaching by the more senior Chefs.
Assist the kitchen achieving budgetary targets by controlling waste through good stock rotation and control.
Deliver adhoc tasks as requested by the Executive or Head Chef and / or Sous Chef.
Skills
Minimum 2-3 years professional cooking experience in a full-service restaurant
Basic product identification knowledge in produce, meats, fish and shellfish, dry goods, pastry items and equipment.
Understand basic cooking methods: braising, poaching, roasting, steaming, saute, grilling, blanching.
Proficient knife skills, ability to cut all vegetables and fruits in all utilized cuts and have the ability to train and monitor others.
Possess good financial and English skills for calculating, communicating, writing requisitions/ completing prep food forms, inventory lists, and for retrieving information as needed.
