Bonnington Distillery is hiring a new full-time Distillery Operator.



Bonnington distillery is a Single Malt Scotch Whisky Distillery in the heart of Leith Edinburgh near the banks of the Water of Leith. Found in 2019 with our first cask fill in March 2020, we are Edinburgh's largest and Oldest Single Malt Scotch Whisky Distillery, the first in nearly 100 years! With a passion for Whisky and excellence, we are looking for a new Distillery Operator to join our team

The purpose of this role is to ensure production standards are met with the day to day running of the site. The role is wide and varied but is primarily responsible for running and record keeping for all processes from Milling, Mashing, Fermentation, Distilling and Cask Filling. The role is a fantastic opportunity for those with relevant experience looking to apply their knowledge and passion to producing a quality Scotch Whisky born in the heart of Leith, Edinburgh.

These are some of the things that you can be expected to do over the course of the day. This is to give you a snapshot of the breadth of the job.



? Learn from and take direction from Distillery Manager, Shift Leads and work as part of a team

? General cleaning and sanitation of the production floor, warehouse space and other working areas.

? Inventory management of raw materials, barrels & new make spirit.

? Managing production across all points in Scotch Whisky production.

? Data keeping and digitising paperwork

? Setting up pipework, hoses and pumps

? Filling and moving whisky barrels, including casks preparation and deliveries.

? Cleanliness and upkeep of all areas.

? Great organisation and record keeping with attention to detail is essential.

? Adherence to Health and Safety and HMRC guidelines at all times.

The successful candidate will possess the following desirable skills and qualifications:



? Have knowledge in Scotch Whisky production, safety standards and adherence to other production guidelines

? A passion to create a high-quality Single Malt Scotch Whisky

? Ability to learn new skills. Prior experience and training are not necessarily essential.

? Work with our diverse team to make a product you can be proud of.

? To repeatedly lift to 25 kg and work in wet and dry environments in a variety of temperatures and working up to 8 hours on your feet.

? To be computer literate with knowledge of MS Office including Word and Excel

? Adhere to wearing PPE and other safety guidelines is essential

? Do other reasonable duties as directed by the Distillery Manager & Shift Leads

? Forklift qualified is desired but not essential

? Prepared and willing to work rotating shift work including nights

What sort of hours will I work?



We are currently operational during the week Monday-Friday running 24/5, spilt into 3 teams of 1 shift lead and 2 operators. Weekly shifts rotate but are based on 3 8-hour shifts working either morning, afternoon or night.

There is the potential of 24/7 production where you will then be required to work a 12 hour 4 on/4 off rotating shift pattern if ever was the case.
