Job Description

The 1936 Pub Company are seeking an experienced Executive Chef to manage the food and restaurant operations across our group, including Papillon, The Old Schoolhouse, The Bookbinder, Love & Rockets. Candidates will have experience managing large chef and prep teams across multiple venues, understand P&L reporting, and have a demonstrable track record of excellent hiring and training standards. This is a demanding role that requires a proactive, disciplined, and motivated candidate. Head chefs with experience with large volume sites and experience with the above are encouraged to apply.

Responsibilities:

- Oversee all kitchen operations, including food preparation, cooking, and presentation.
- Manage and regularly update recipes & spec books.
- Monthly dry stock, sales, GP & P&L reporting.
- Manage supplier costs, ensuring quality ingredients.
- Develop and cost new menus and specials, supplying regular seasonal menu changes with head chefs.
- Consistent, diligent management of allergen matrices.
- Create, manage, and sign-off off weekly rotas and food sales forecasts.
- Ensure compliance with food safety regulations and maintain clean and organised kitchen environments.
-Conduct weekly service audits & monthly kitchen audits.
- Hire, train, and lead kitchen staff in culinary techniques.
- Work & cover in all kitchens when required; being fully flexible is essential.

Requirements:

- Experience in a similar role.

- Strong background in food production and kitchen management.

- Excellent leadership skills to inspire and motivate the kitchen team.

- Proficiency in menu planning, costing, and stock and inventory management.

- In-depth knowledge of hospitality industry standards and trends.

- Ability to help create a positive work environment that fosters creativity and teamwork.

Pay: 43,000.00-45,000.00 per year
