The Executive Chef at Federal Cafe is a pivotal role responsible for leading and inspiring the kitchen team to deliver exceptional customer experiences that align with our brand's commitment to high-quality, brunch and coffee offerings.
You will be a leader who is at the forefront of menu development, ensuring that each dish reflects the vibrant and fresh flavours that our guests expect.
You will manage all aspects of the kitchen, from staff training and development to cost control and food safety, while fostering a positive and productive work environment.
This role requires a creative and dynamic chef with a passion for innovation, strong leadership skills, and the ability to operate efficiently in a fast-paced environment.
Responsibilities
1. Culinary Leadership:
Develop and execute creative, seasonal menus that align with Federal Cafe's brand, focusing on fresh, locally sourced ingredients.
2. Kitchen Management:
Recruit, train, and manage kitchen staff, fostering a collaborative and motivated team environment. Including scheduling and performance management
Develop staff through regular training sessions.
Manage kitchen operations, including workflow, staff schedules, and food preparation processes to ensure timely and high-quality service.
Maintain a clean, organized, and compliant kitchen that meets all local health and safety regulations.
3. Cost Control and Budgeting:
Oversee food costing, portion control, and waste management to ensure profitability.
Work closely with suppliers to source the best ingredients at the most competitive prices.
Monitor and control kitchen inventory, ensuring optimal stock levels and reducing waste.
Prepare and manage the kitchen budget, including labour and food costs, to achieve financial targets.
4. Health and Safety Compliance:
Ensure strict adherence to all food safety and hygiene regulations, including proper food storage, preparation, and cooking practices.
Conduct regular health and safety audits in the kitchen to maintain compliance with local and national regulations.
Train and enforce safety protocols among kitchen staff, including the proper use of kitchen equipment and handling of hazardous materials.
6. Professional Development:
Stay current with culinary trends, techniques, and industry best practices.
Mentor and develop the kitchen team, providing ongoing education and growth opportunities.
Oversee the preparation, cooking, and presentation of all dishes to ensure consistency and quality.
Stay current with culinary trends and incorporate them into menu development.
Lead by example in all aspects of kitchen operations, maintaining high standards of excellence.
Skills
Proven experience as a cook or chef in a high-volume restaurant setting.
Strong knowledge of food preparation techniques and culinary arts.
Excellent team management skills with the ability to motivate and inspire staff.
Proficient in supervising kitchen operations while maintaining high standards of quality.
Familiarity with food safety regulations and best practices in hospitality.
Exceptional organisational skills with a keen attention to detail.
Ability to work under pressure in a fast-paced environment while maintaining composure.
