As

Executive Pastry Chef

,you will lead the pastry team and work closely with the Executive Head Chef to uphold and exceed the exceptional standards for which the hotel is renowned. This role offers the opportunity to shape and elevate the pastry offering across the hotel,with genuine creative influence and the support to bring new ideas to life.



The Rubens at the Palace Hotel,part of the Red Carnation Hotel Collection,is a stunning five star property located in the heart of London's Victoria and within walking distance of Buckingham Palace. This wonderful hotel has been fully refurbished and features 161 individually designed bedrooms and suites,as well as a range of Food and Beverage outlets including The English Grill Restaurant,The Curry Room Restaurant,The New York Bar,The Palace Lounge and Champagne Bar,as well as 9 well equipped function rooms.




Key responsibilities of the Executive Pastry Chef will include:



Lead and oversee the day-to-day operation of the pastry kitchen across all outlets and events Inspire,manage,and develop a talented pastry brigade,fostering a culture of excellence and creativity Create,develop,and innovate pastry menus in collaboration with the Executive Head Chef Ensure consistently high standards of quality,presentation,and guest experience Maintain full compliance with health & safety,food hygiene,and hygiene regulations Manage cost control,stock management,and wastage in line with departmental budgets


The ideal candidate for the Executive Pastry Chef position should have:



Proven experience as an Executive Pastry Chef or Senior Pastry Sous Chef within a five-star hotel or fine-dining environment Strong leadership skills with a demonstrated ability to manage,inspire,and develop a large pastry brigade Exceptional pastry knowledge across restaurant service,afternoon tea,banqueting,events,and high-volume luxury operations A high level of creativity and innovation,with the ability to design visually stunning,modern desserts while respecting classic techniques A solid understanding of cost control,GP management,stock management,and wastage reduction Excellent organisational and time-management skills,with the ability to deliver under pressure
