Summary
Job Summary:
The Food & Beverage Manager is responsible for overseeing all aspects of guest services across all Food & Beverage outlets. This role involves managing guest requests, addressing complaints, coordinating with other departments, and overseeing Breakfast, Bars and Conference & Events Operations
Key Responsibilities:
Be responsible and take ownership of all F&B outlets - Breakfast area, Bars and functions
Ensure excellent customer service at all times
Responsible for staff training in including and not limited to allergens, food safety, sanitation standards, and responsible alcohol service
Train, mentor and develop team members
Promoting a positive culture throughout the team
Act as a Duty Manager when required
Complete thorough and regular walk arounds
Complete firewalk
Confidently take a lead with all function types
Responsible for cellar management and stock control
Line cleaning
Beverage order - Keeping a reasonable level of stock holding. Sticking to par levels while also considering trends and function requirements
Ordering consumables
Counts for stocktaking
Ensuring we are maximizing liquor GP
Ensure that all F&B operations comply with health, safety, and hygiene regulations.
Deal with any internal conflict confidently
Ensuring food and drinks orders are processed through till correctly.
To prepare and serve drink to company standard at guest's request
Be available to help with food service when required
Be aware of allergen and dietaries and;
Understand the importance and potential severity of serving incorrect dishes to those with allergies
Ensuring guests have appropriate table and glass wear once they have ordered
Preparing and delivering room service
Doing check backs with guests who have ordered food - Adding comments to check back folder wherever possible.
Cleaning, monitoring and replenishing coffee machines
Guest Engagement - Interact with guests where possible, provide table service
Product knowledge - Be able to recommend certain drinks
Keep Bars and Breakfast areas presentable, welcoming and friendly
Ensuring all glassware and cutlery are properly polished
Verifying age in compliance with Challenge 25
Comply with all legal requirements - (e.g. Weights & Measures Act 1985)
Check the team are using checklists following opening and closing procedures
Ensuring conference break out area is stocked up, clean and presentable
To serve all catering aspects to events in a professional and friendly manner
Ability and knowledge to set function rooms and able to train and advise other team members
Understanding different linen sizes and use accordingly
Ensuring policy for rejected linen is adhered to
Assist breaking down and resetting function rooms
Clean as you go - Maintain high standards of bar cleanliness
Take a lead with stock rotation
Upholding company policy in recording wastage
Preparing drinks receptions - record usage
Preparing pre order drinks - record usage
Pouring wine/prosecco at functions
Confidently solve guest concerns in an empathetic and professionally way and offer reasonable service recovery accordingly
Handle any basic HR-related matters within the department, including hiring, scheduling, and performance management.
To have a flexible approach with shift patterns depending on the needs of the business
Arrive promptly and complete agreed shift(s) on rota - contact line manager or Duty Manager in unable to for any reason
Reporting any maintenance issues/damaged equipment that may affect the department
To be dressed appropriately to do your role as agreed with your line manager
Leading by example to support other departments when required
Action any reasonable task at the General Manager's or Operations Manager's request
