It's time for our superstar General Manager, Kirsten, to spread her wings and take up a new adventure - which means there's a rare opportunity for someone funky, driven, and full of personality to step in and keep the Tonic ship sailing full speed ahead.

Kirsten will be vacating the role in January 2026, and we're looking for the right person to work alongside her from now until Christmas before stepping into her shoes in the New Year.

This is more than just a job - it's about being the heart and energy of Tonic: leading our small, close-knit team, driving standards, and keeping the good times (and great cocktails) flowing.

What the role involves:

Being both operational and hands-on, working shifts alongside the bar team Leading, managing, and inspiring a small, fast-paced team Delivering high standards of cocktails, hospitality, and guest experience Scheduling, training, and developing staff Stock control, ordering, and managing supplier relationships Financial management - budgets, margins, and P&L awareness Ensuring compliance with licensing laws, health & safety, and bar standards Marketing input - helping shape events, social media presence, and customer loyalty

The skills you'll need:

Strong leadership and people management skills Hands-on hospitality experience (cocktail bar / late-night venue background preferred) Excellent organisation and communication (this is huge for us!) Ability to stay calm and make good decisions under pressure Financial and operational acumen A balance of professionalism with a fun, approachable personality Willingness to be fully invested - including picking up calls/emails outside of shift hours
