Aldwickbury Park Golf Club is part of BGL Golf (Burhill Group Ltd), one of the largest owners and operators of golf facilities in the UK and privately owned by the Guinness Family.

We are currently seeking suitable candidates for an exciting and varied full-time role based at our popular and friendly golf club / function venue in Harpenden.

POSITION:

Senior Head Chef

RESPONSIBLE TO:

General Manager

MAIN DUTIES:



Overall responsibility for the kitchen operation and people management. Day to day preparation of casual and function food while ensuring the supervision, management and training of the kitchen team to produce a consistent delivery of quality food.

Manages all elements of the department including compliance (maintaining an exemplary level of hygiene standards), wage budgets (cost tracking, rotas and holiday cover) and HR management (training, on-going reviews, development plans and performance management), reporting back to the General Manager on a weekly / monthly basis.

Responsible for the creation and development of an exciting and varied daily specials board as well as the production of all banqueting and bespoke menus. Produces detailed costing and allergen information for all dishes. Maximises profitability through effective stock management and wastage control.

To be a figurehead for the department, leading from the front and working directly with customers to deliver their requirements.

RESPONSIBILITIES:



Manage all food preparation for casual and function dining. Create and develop innovative menus and daily specials with precise costing, specifications and pricing strategies. Maximise profitability through the effective management of food and labour costs in conjunction with waste control. Effectively plans ahead in order to manage staffing levels in line with anticipated demand. Management of the kitchen team including appraisals, development plans, training and performance management. Responsible for all food and supply purchases, including full compliance with nominated vendors, processing invoices. Review all bookings for catered activities, i.e. banquets/meetings/weddings/societies etc. Manage the maintenance and upkeep of all kitchen equipment including purchases and repair. Deal directly with customers to develop menu ideas, gain feedback or address questions / issues / complaints in an appropriate manner. Problem solving / trouble shooting issues that may occur within the department. Recruit and train all kitchen staff, liaise with agencies when required Maintain precise records including rosters, holiday, food / payroll costs and health and safety compliance. Ensure that all policies and procedures related to the operation of the Food and Beverage department are enforced and implemented appropriately, including personnel management, sanitation, food preparation, storage and health and safety. Effectively communicate to the kitchen team regarding menu items, events and any changes to policy / procedure. Work closely with the Food and Beverage Manager, other Heads of Department and General Manager to maximise the customer experience and develop the business. Maintain knowledge of local competition and general industry trends. Comply with BGL personnel policies and procedures and health and safety procedures. To undertake any further duties as requested by the management.

CANDIDATE SPECIFICATION:



Proven working experience as a Head Chef. Excellent record of kitchen management and hygiene standards. Ability to spot and resolve problems efficiently. Capable of delegating multiple tasks. Outstanding communication and leadership skills. A keen and demonstrable interest in cooking trends and best practices with the ability to apply this to the operation. Working knowledge of various computer software programs including MS Office, management software and POS systems.

Pay: 36,000.00-40,000.00 per year
