Rowallan Castle Estate

The Team at Rowallan Castle are looking for a hard-working passionate Head Chef. We are

seeking someone with preferably 5 years' experience at this level, ideally with 2 Rosette

background.

The ideal candidate will be mature, self-motivated and driven to take an already established

dining offering and help elevate it to the next level. We offer a very competitive salary with a

good work life balance. This position will suit someone who has a can-do attitude, takes

pride in their work & appearance Due to the estate's location, own transport is essential.

Duties:

- Be punctual and hardworking.

- Be forward thinking and proactive towards new ways to develop our food offering.

- Control food waste and profit margins.

- Taking control and service of a 60 cover Glasshouse Restaurant.

- Training of junior brigade and kitchen porters to maintain a clean, organised and

professional kitchen.

- Maintaining health & safety procedures and filing out relevant paperwork in

accordance with our HACCP policy and Food Safety Law.

- Working closely with our Front of House Team to ensure a smooth, efficient food

offering and service.

- Work closely with the Executive Chef to expand and improve menus and to fully

utilise the grounds to forage ingredients to enhance dishes in the relevant seasons.
