About Kiez



Kiez is a design-led, food-first kebab concept inspired by Berlin and built for London. Our ambition is to redefine what a Berlin-style kebab can be for British consumers through serious cooking, thoughtful sourcing, and spaces designed with as much care as the food itself.

Our food is high quality but never pretentious, delicious but not excessively heavy, and rooted in proper technique. Kebabs are treated as a craft: from marinades and slow-cooked meats to house-made sauces, ferments, and pickles that bring balance, acidity, and depth. Seasonality and produce quality matter, and menus evolve with the year.

As we grow, we are focused on building a brand that is culturally relevant, scalable without becoming generic, and uncompromising on food integrity and consistency.

The Role



As Head Chef, you'll take full ownership of the kitchen. Consistency, execution, and flavour come first.

You'll lead menu development (with particular focus on seasonal dishes and sides), build strong prep systems, manage stock and costs, and run a clean, disciplined kitchen. You'll recruit, train, and lead a team that takes pride in what they serve and you'll be confident both on the pass and in prep.

As the brand grows, you'll help define systems that allow Kiez to expand without becoming generic, maintaining creativity, seasonality, and food integrity across multiple sites.

Key Responsibilities



Kitchen Operations & Food Quality



Lead daily kitchen operations with a strong presence on the pass and in prep, ensuring consistently excellent execution Deliver outstanding flavour, texture, and consistency across the entire menu Maintain high standards of cleanliness, organisation, and kitchen discipline Ensure smooth service flow between kitchen and front of house

Menu Development & Food Identity



Own menu development with a focus on kebabs, seasonal dishes, and sides Develop and perfect recipes, marinades, sauces, and prep methods Champion seasonality, produce quality, and thoughtful sourcing Balance creativity with operational practicality and consistency

People & Kitchen Leadership



Recruit, train, and develop a high-performing kitchen team Build a positive, disciplined, and motivated kitchen culture Set clear expectations, manage performance, and lead by example Identify and develop future senior chefs and kitchen leaders

Standards, Compliance & Systems



Ensure full compliance with health & safety, food safety, and licensing requirements Oversee stock management, ordering, and supplier coordination Implement and maintain SOPs, training standards, and reporting

Brand & Growth Contribution



Protect and elevate Kiez's food identity on a daily basis Collaborate with founders on menu evolution and concept development Help define kitchen systems and standards for future sites Contribute to building a scalable, non-generic food culture as the brand grows

About You



Proven ability to lead, train, and motivate a kitchen team Confidence across both service and prep A genuine passion for kebabs A positive, can-do attitude Strong understanding of seasonality and produce Solid working knowledge of health & safety and compliance
