Job Summary


A unique and exciting opportunity has arisen for a dynamic and creative Head Chef to join our expanding team at our new offering in the St Austell Bay area.

We are looking for an individual who is a team player, versatile, open minded, and a real problem solver who thinks on their feet. You will want to grow and develop within our team, communicating well and having a key role in the creative process within our main kitchen and brand new open show kitchen.

You will lead our team and provide an outstanding service. You will have a real capability to work under pressure communicating well, and keeping calm. The ideal person will be open minded, measured and have a true hands-on approach.

Our team is small, friendly and we work well together in a close environment. You will be joining a positive working environment, leading by example and bringing plenty of enthusiasm for this vibrant new space. We close for Christmas, New Year, and January guaranteed so you can enjoy extended personal time off, and your overtime throughout the year should cover this down time.

Responsibilities



Menu Development: Contribution towards seasonal menus that align with the business's brand and price point. We are a business that operates with a senior hospitality team. All food development begins with a discussion and agreement thereafter. Kitchen Management: Directing daily operations, inclusive of food preparation, cooking, and plating. Minimising wastage with a concentration on nose to foot ethos and challenging suppliers for the best price given within the market and season. Leadership: Training, and growing a kitchen team. This includes scheduling, motivating, leading through example and conducting performance reviews. Must be a leader who leads from the front by example and not from behind with a whip. Quality Control: Inspecting all dishes before service to ensure they meet standards. Assessing deliveries daily to ensure the best product is delivered. Any deliveries are rejected, reported and returned if quality is inferior. We offer a great product and that begins from the delivery of a raw ingredient. It has to be quality. Stock & Budgeting: Managing and reporting supplier relationships, ordering stock and reporting cost defects to ensure target profit margins are met. Report wastage to achieve and forecast better production. Health & Safety: Enforcing strict compliance with food hygiene and safety regulations. Utilising our in-house systems alongside our site specific SFBB respective of each outlet. Our sites are immaculate. A real pleasure to work within state of the art kitchens with top quality equipment.

Skills & Qualifications



Food Profile and Qualifications: Accomplished Chef in a variety of cooking techniques and disciplines. Educated to Level 3 professional cookery or similar. Advanced food safety/hygiene certificate to Level 3 or higher. A specific focus on West and South Coast America, Caribbean and South American Cuisine is beneficial. Experience: A minimum of 3 years in a similar senior position within a high volume and high standard catering environment. Leadership & Communication: Possess the ability to motivate a team and communicate clearly under pressure. Our Hospitality operation prides itself on a "No ego and no shouters" within our kitchens philosophy. Our teams are close and respect one another. To further this mentality is essential. Business Acumen: Understanding of food costing, stock control and P&L management. Working closely with the hospitality team across sites to maintain and improve GP and EBITDA targets. Administration: Proficient and confident in IT software for kitchen management and reporting (e.g., Excel, Outlook, Word and other MS office software. Knowledge on Canva is advantageous) as well as monitoring and managing labour costs. Attention to Detail: Manage portion control from preparation, production and cooking to final plating. To achieve consistency across the sites with agreed specification.
