Job Description

Cook needed for a small friendly Care Home in Saltdean for up to 13 Residents.

Hours of work are 7.30-2.30

5 days a week to include alternate weekends.

Responsibilities are as follows:

Responsible for ensuring residents receive a varied, appealing, wholesome and nutritious diet, which is suited to individual assessed and recorded requirements. Food, including liquefied meals, must be presented in a manner which is attractive and appealing in terms of texture, flavour and appearance, in order to maintain appetite and nutrition. As the Head Cook, you are responsible for managing the operation of the kitchen including food production, staff management, supplies, presentation / service and record management and compliance with quality and safety standards.

Prepare appetising and nutritious food for the residents on a daily basis. Prepare a menu in conjunction with the residents' likes and dislikes. This must rotate on a four week basis. Change the menu's on a regular basis as laid out in the minimum standards. Ensure that the kitchen is hygienically clean at all times Ensure all food orders are requested with ample time while working under an agreed budget. Meet differing dietary requirements as necessary. Prepare breakfast if required by the resident at an agreed time. Ensure all meals are ready at the appropriate time. Offer and prepare, if necessary, at least three main options for lunch each day ensuring that fresh vegetables are used. Ensure that fresh cake is prepared for a residents' birthday or any other occasions as requested. Oversee the smooth running of the kitchen. Ensure all cleaning is completed as per cleaning rota. Ensure all food returned to the fridge is covered with cling film and dated. Ensure all foods are appropriately covered. Ensure appropriate kitchen protocol is maintained i.e. no eating in the kitchen, carers are not to wash their hands at the kitchen sink, etc You will be responsible for environmental health inspections and evidencing your work. For example, documenting all requirements in the safer food business guide, you must keep this file up to date at all times. Ensure all frozen foods are taken out of the freezer giving ample time to defrost Attend and participate in staff meetings and attend all mandatory training when required. Attend supervision and appraisals ensuring that you have prepared for these when required. Attend any other training when a need has been identified. Communicate effectively with other staff, relatives and visitors including professional agencies regarding residents. Respond accordingly to any messages and pass them on promptly. Make visitors feel welcome. Provide refreshments/assistance when required to report any faults/defects in the Home to the appropriate person in charge. Be fully aware of the fire policy and the awareness of food hygiene regulations. To ensure you are familiar with all current policies and procedures and understand your duty to comply and implement them when necessary. Wear uniform, with plain black trousers and flat sensible shoes at all times Be aware of the resident's care plans and dietary requirements. Be aware of confidentiality at all times. Ensure that you do not use a mobile telephone while on duty Ensure that all information of a confidential nature gained in the course of duty is not divulged to third parties. To keep all records of cleaning work completed after each shift in the appropriate book.
Ensure that outside and storage areas are clean and tidy and free of any pests

Oversee any meals that have been prepared. Prepare desserts as necessary for both lunch and supper. Prepare or part prepare the supper dish for that day or delegate this to the appropriate person. Prepare or delegate the preparation of the sandwiches for supper. Ensure fresh cake is made for afternoon tea.
