Head of food production

to take charge of our meat processing operations and ensure excellence, from sourcing to final cut.

About the Role:

As Head of food production, you will oversee daily meat processing operations in our Butchery and Central Processing Unit. You'll be responsible for supervising the butchery team, maintaining food safety standards, managing inventory, and ensuring our cuts meet exacting specifications for retail and food service clients.

Key Responsibilities:

Lead and manage a team of butchers in a high-volume CPU facility Ensure consistent, high-quality meat cutting and portioning Maintain compliance with all health, safety, and hygiene regulations Monitor and manage stock, margin, minimize waste, and control costs Collaborate with procurement and sales teams to align production with demand Train and mentor junior butchers and staff Optimize workflows to improve productivity and efficiency

Requirements:

Minimum 5 years of professional butchery experience, including 2+ years in a supervisory role Proven experience in a Central Processing Unit (CPU) or similar meat processing environment In-depth knowledge of meat cuts, carcass breakdown, and food safety regulations Strong leadership, communication, and organizational skills Ability to work in a fast-paced, physically demanding environment HACCP certification or equivalent is a strong asset
