We are seeking an experienced, reliable, and highly skilled
Head Sushi Chef
to lead our kitchen and oversee the preparation of authentic sushi and Japanese dishes. In this senior role, you will be responsible for maintaining exceptional culinary standards, managing kitchen staff, and ensuring smooth daily restaurant operations. This is an exciting opportunity for a talented chef to take ownership of the kitchen, contribute to menu development, and shape the culinary direction of a vibrant Japanese restaurant.
Responsibilities
Lead and supervise the kitchen team, ensuring high performance, organisation, and professionalism
Prepare a wide range of sushi and Japanese dishes, demonstrating expert-level technique and presentation
Train and mentor junior chefs and kitchen staff in sushi preparation, knife skills, food safety, and workflow efficiency
Oversee ingredient quality, ensuring proper handling of fish and all fresh produce
Maintain a clean, safe, and well-organised kitchen, adhering to hygiene and food safety regulations at all times
Manage inventory, monitor stock levels, and coordinate ordering to ensure smooth operations
Develop and refine menu items, including seasonal specials and new sushi creations
Collaborate with front-of-house management to ensure smooth service during peak hours
Uphold high standards of customer service, ensuring dishes are served promptly, consistently, and to exceptional quality
Support broader restaurant operations and contribute to staff scheduling, workflow planning, and kitchen organisation
Requirements
Proven experience as a Sushi Chef, with advanced sushi-making skills and strong knowledge of Japanese cuisine
Previous experience in a supervisory or head chef role within a restaurant environment
Expert knowledge of food safety, hygiene practices, and proper handling of raw fish
Strong leadership, communication, and team management skills
Ability to work efficiently in a fast-paced, high-pressure environment
Excellent knife skills and attention to detail in presentation and consistency
Reliable, punctual, organised, and committed to maintaining exceptional standards
Familiarity with restaurant operations, including service coordination and customer interaction
Fluency in English
Legal right to live and work in the UK
Beneficial to Have
Knowledge of Japanese culture or cuisine
Ability to speak Japanese
