Lead Sushi Chef reporting to the Head Chef


As Itamae Chef, you will be at the heart of shaping the sushi tradition at Wolves of Tokyo, leading the sushi section with precision, artistry, and creativity. Working alongside the Head Chef and Sous Chef, you will ensure every dish tells a story, balancing tradition with innovation while creating a memorable dining experience for our guests.


We expect you to:




Create sushi of the highest quality with exceptional skill, balance, and artistry, blending tradition with innovation


Train, inspire, and support your team to grow in skill and confidence


Stay current with emerging sushi trends and techniques, bringing creativity while respecting Japanese culinary traditions


Lead with strong communication and integrity, fostering a positive and motivated kitchen culture


Uphold the highest standards of food safety, hygiene, and compliance at all times


Work closely with the Head Chef and Sous Chef to ensure smooth, efficient, and consistent kitchen operations


Monitor GP% and manage waste effectively, balancing quality with profitability


Engage confidently with guests, showcasing your craft and adding theatre, authenticity, and hospitality to the dining experience

Passionate about Japanese cuisine, with an eye for detail and uncompromising standards in presentation and quality.

Certified in Food Safety Level 3, with thorough knowledge of compliance, health, and safety standards.
