Overview


We are seeking a talented and passionate Junior Sous Chef to join our dynamic kitchen team at The Old Mill. The ideal candidate will possess a strong culinary background, demonstrating expertise in food preparation and safety, alongside excellent leadership skills. As the Junior Sous Chef, you will play a crucial role in supporting the Head Chef and Senior Sous in managing kitchen operations, ensuring high standards of food quality and presentation while fostering a positive and efficient working environment.

We are a family run pub which is 1 of 3 in the north east area and pride ourselves on making quality homemade food. The role consists of 45 hours per week within a very attractive schedule compared to most hospitality settings.

Responsibilities



Assist the Head Chef in menu planning and development, contributing creative ideas to enhance our culinary offerings. Supervise kitchen staff, providing guidance and support to ensure efficient food preparation and service. Ensure all food safety and hygiene standards are adhered to, maintaining a clean and organised kitchen environment. Oversee daily kitchen operations, including inventory management, ordering supplies, and ensuring proper storage of ingredients. Train new kitchen staff on cooking techniques, food safety practices, and operational procedures. Collaborate with front-of-house staff to ensure seamless service during busy periods. Prepare high-quality dishes in accordance with established recipes and presentation standards. Monitor portion control and minimise waste to maintain cost efficiency.

Experience



Proven experience as a Junior Sous Chef or in a similar role within the hospitality industry. Strong culinary skills with a deep understanding of food preparation techniques and kitchen operations. Demonstrated leadership abilities with experience supervising kitchen staff effectively. Knowledge of food safety regulations and best practices is essential. Ability to work well under pressure in a fast-paced environment while maintaining attention to detail. Excellent communication skills, fostering collaboration within the kitchen team.
