Hambledon is a premium Hampshire wine estate, pioneers of English wine, located on the edge of the South Downs National Park. In 2023 it was purchased by British owned and multi-generational businesses, Symington Family Estates and Berry Bros. & Rudd
Our ambition is to be a best-in-class hospitality-led destination in the English wine category, that feeds the soul and allows people to flourish and thrive in this beautiful part of the South Downs National Park.
The destination will offer multiple food and drink-led products, spaces for private hire for multiple occasions and a series of wine-led experiences befitting of our innovative profile in the market.
We completed in December 2024 a multi-million-pound visitor centre which will be a pivotal part of our hospitality offering at Hambledon. In time we are also planning to develop a boutique accommodation offer, that will complete our guest experience.
Responsibilities:
We are looking for an experienced and motivated Chef de Partie to join our kitchen brigade. You will be responsible for running a specific section of the kitchen, ensuring that dishes are prepared to the highest standards in line with our recipes and presentation guidelines. The role requires strong culinary skills, excellent organisation, and the ability to work effectively as part of a busy team.
Main Duties:
oSection Management - Take ownership of a designated section (such as grill, sauce, larder, or pastry), ensuring it operates smoothly during service.
oFood Preparation & Cooking - Prepare, cook, and present dishes to a consistently high standard.
oQuality Assurance - Maintain high standards of taste, presentation, and portion control.
oStock Control - Monitor stock levels, carry out stock rotation, and inform the Sous Chef of any shortages.
oHygiene & Safety - Adhere to all food hygiene and health & safety regulations, keeping your section clean and organised at all times.
oTeamwork - Work collaboratively with other chefs to ensure smooth and efficient service, particularly during busy periods.
oTraining - Support the training and development of junior members of the kitchen team.
Skills & Experience Required
Knowledge of various cooking methods, ingredients, and kitchen equipment.
oAbility to remain calm and organised under pressure.
oGood communication skills and a positive, can-do attitude.
oUnderstanding of food hygiene regulations (Level 2 Food Safety certificate desirable).
oPassion for food and a commitment to delivering consistent quality.
