Responsibilities
Prepare and season meats for smoking and cooking, ensuring adherence to recipes and quality standards
Operate and maintain smoking equipment, including wood smokers and other specialized cooking apparatus
Monitor cooking times and temperatures to achieve optimal tenderness and flavor
Develop and refine menu items featuring smoked meats, collaborating with the culinary team on new recipes
Ensure all food handling procedures comply with food safety regulations and sanitation standards
Assist with meal preparation for catering events or special functions as needed
Maintain cleanliness of the kitchen area, including tools, equipment, and workstations
Manage inventory of meat supplies and ingredients, ensuring freshness and proper storage practices
Skills
Proven experience in food preparation, smoking, or cooking within a restaurant or catering environment
Strong knowledge of meat handling, seasoning techniques, and smoking methods
Excellent knife skills and proficiency in various culinary techniques
Familiarity with menu planning and presentation of smoked meats and related dishes
Knowledge of food safety standards and sanitation practices in a professional kitchen setting
Ability to work efficiently under pressure while maintaining attention to detail
Fine dining experience or experience working in upscale restaurants is a plus
Strong organizational skills with the ability to manage multiple tasks simultaneously
