Overview


We are seeking a proactive and hands-on individual to take over and drive our bakery's operations. Reporting to the General Manager, you will be responsible for leading the bakery team, coordinating daily production, maintaining compliance, and improving efficiency.

Flapjackery is an award-winning artisan bakery, proudly crafting handmade flapjacks using the finest British ingredients. As we continue to grow, we're looking for an experienced and organised Production Manager to lead and coordinate our production operations across kitchen, finishing and packing. This role is central to maintaining our high standards and ensuring the smooth day-to-day running of our bakery.

Key Responsibilities



Production Planning & Coordination



Plan and manage daily production schedules across kitchen, finishing and packing. Coordinate workflows and staff to ensure timely and efficient output. Liaise with warehouse staff for stock movements . Ensure all necessary ingredients and materials are available for production.

Documentation & Reporting



Complete and file all production-related paperwork, including Cleaning Records and Production Reports. Provide weekly production updates during Monday team meetings. Maintain accurate HACCP documentation and update risk assessments regularly. Report key production metrics, including quality and stock levels, to the Senior Management Team.

Staff Management & HR Liaison



Oversee Bakery staff, including Kitchen, finishing and packing teams, working closely with Team Leaders. Manage staff rotas to ensure adequate daily coverage. Conduct regular performance reviews and help manage HR processes such as pay, sickness, and holidays. Interview and onboard new staff; handle any disputes or team performance issues and escalate where necessary. Review daily staff hours for payroll accuracy.

Quality, Hygiene & Compliance



Uphold all quality control procedures and ensure products meet our high standards. Monitor and maintain hygiene standards across the bakery. Plan and execute scheduled deep cleans. Ensure the site is always inspection-ready for EHO and other regulatory bodies. Keep all first aid kits stocked and accessible.

Equipment & Facilities Maintenance



Monitor the performance of all bakery equipment. Arrange regular servicing and repairs of machinery. Liaise with contractors for maintenance and repair works. Organise pest control when required.

Project & Efficiency Management



Oversee bakery improvement projects (eg, installations, layout updates). Ensure production areas are protected during works. Continuously evaluate and improve production efficiency and workflow.

Weekend & Emergency Cover



Be available (or ensure a suitable delegate is) for urgent weekend issues, such as staff shortages, equipment failures, or production disruptions.

What We're Looking For



Previous experience in a similar food production or manufacturing environment. Strong people management and leadership skills. Highly organised with a detail-oriented approach. Understanding of HACCP, food safety, and hygiene standards. Problem-solver with the ability to stay calm under pressure. Practical, hands-on approach with a focus on continuous improvement. Comfortable with admin tasks and production reporting. A passion for premium food and a genuine interest in product development.

Pay: 35,000.00-48,000.00 per year
