An exciting opportunity has arisen for an experienced Restaurant Manager to take the lead at a thriving 24-bedroom hotel and restaurant in the Gloucestershire countryside. Following a recent multi-million-pound refurbishment, the venue now combines luxury accommodation, a high-volume restaurant, and a buzzing bar, attracting guests for weddings, events, and destination dining.
With a weekly turnover of 80,000-110,000 and a team of 20-25 front-of-house staff, this is a fast-paced, rewarding environment for a motivated leader who thrives on delivering exceptional service while keeping the operation running efficiently.
The Role
As Restaurant Manager, you will:
Oversee the day-to-day operation of the restaurant, ensuring smooth service across high-volume covers (up to 400 per day at weekends).
Lead, train, and motivate a team of assistant managers, supervisors, and waiting staff.
Implement and monitor SOPs, maintaining the highest levels of service, hospitality, and guest care.
Plan and manage rotas, keeping labour costs and forecasting on target.
Drive sales and profitability through upselling, guest engagement, and effective cost control.
Conduct daily briefings, ongoing training, and one-to-one coaching.
Resolve guest concerns quickly and professionally, maintaining a positive reputation.
Collaborate closely with the kitchen team to deliver seamless service.
What We're Looking For
Experienced Restaurant Manager or strong Assistant Manager looking to step up.
Proven ability to lead large teams (20+ staff) in a busy, food-led environment.
Strong commercial awareness with a track record in labour cost control and rota planning.
Hands-on leadership style -- calm, approachable, and able to inspire your team.
High standards for guest service, presentation, and consistency.
A proactive problem-solver with excellent organisational skills.
Flexible and adaptable, with availability to work a mix of mornings, evenings, and weekends.
