We are looking for an exceptional Restaurant Manager to lead our new opening; from the final refurbishment phase, through pre-opening, and beyond. Pezo's is set to become the most exciting new restaurant in the area, with a focus on top-quality seasonal cooking and outstanding hospitality.

The Role:
As Restaurant Manager, you will work closely with the owner and chef, ensuring smooth daily operations, building an extraordinary team, and shaping the restaurant's reputation. You will take ownership of all front-of-house operations, lead with a can-do attitude and always go the extra mile for guests and staff alike.
What we are looking for:
Proven experience in restaurant openings
Strong leadership and team-building skills
Proficiency with EPOS systems, stock take & stock control
Experience organising restaurant booking systems
A deep passion for food and wine, wine knowledge is a big plus
Hands-on experience in quality-driven, fresh-food environments
Charismatic, highly organised, with a can-do attitude
Ability to be the face of the restaurant, build guest loyalty, and ensure smooth day-to-day operations
Able to collaborate with ownership and chef to shape the future vision
Previous experience within hotel/restaurant/spa settings desirable
Key Responsibilities:
Lead the restaurant through its final refurbishment and opening stages
Recruit, train, and inspire a passionate team
Oversee and optimise FOH operations daily
Manage stock, EPOS, and supplier relationships
Develop and manage the booking system
Ensure all health & safety and compliance standards are met
Drive exceptional guest service and customer satisfaction
Work closely with the owner to achieve the restaurant's vision
Be hands-on, present, and proactive on the restaurant floor

Guest satisfaction ratings & reviews
Sales growth vs targets
Employee retention & team satisfaction
Cost control: stock accuracy, wastage levels
Table turns & booking conversion rates
