Set to open within The Langham, London, Sale e Pepe Mare marks an exciting new chapter in the legacy of Sale e Pepe, the iconic Knightsbridge restaurant that has shaped Italian dining in the capital since 1974. This collaboration brings together two renowned London institutions to create a landmark destination for coastal Italian cuisine.


Sale e Pepe Mare celebrates the sun-drenched elegance of Italy's coastline, with a strong culinary focus on handcrafted breads, baked goods, and dough-based preparations that underpin the menu, alongside exceptional seafood and timeless Italian flavours. Serving breakfast, lunch, and dinner, the restaurant blends tradition with contemporary Mediterranean sophistication.


We are now seeking an experienced Senior Baker to join our opening kitchen team. This is a senior, specialist role responsible for leading all baking production, ensuring exceptional quality, consistency, and execution across all bread and baked goods served within the restaurant.

About the Role

As Senior Baker, you will take ownership of the bakery function, overseeing the daily production, baking, and presentation of all breads and baked items. You will act as the technical lead for dough and fermentation, setting standards and supporting the wider kitchen team.


Working closely with the Head Pastry Chef & Executive Chef, you will play a key role in menu development, production planning, and maintaining the highest standards of craftsmanship, while respecting traditional Italian baking techniques.

Key Responsibilities

Lead and manage all bread and baking production for the restaurant Prepare, mix, ferment, shape, and bake a wide range of doughs using traditional and modern techniques Produce artisanal Italian breads, breakfast baked goods, and dough-based menu components Set and maintain standards for fermentation, proofing, baking times, and finishing Plan production schedules to support breakfast, lunch, and dinner service Ensure consistency, quality, and presentation across all baked goods Collaborate with the senior kitchen team on menu development, seasonal changes, and specials Maintain strict food safety, hygiene, and cleanliness standards within the bakery area Manage stock control, ordering, yields, and waste related to bakery production Train, support, and mentor junior chefs involved in baking and dough preparation

Requirements

Proven experience as a Senior Baker or Baker in a premium restaurant, hotel, or artisan bakery environment Advanced technical knowledge of doughs, fermentation, and baking processes Experience leading or overseeing baking production in a high-volume, high-end setting Strong attention to detail, consistency, and quality control Ability to perform under pressure in a fast-paced service environment Professional, disciplined approach with strong leadership and team ethic Passion for mentoring and developing junior team members Proof of right to work / settled or pre-settled status in the UK
