The role -- what you'll do
Lead the kitchen alongside the Head Chef, running service from the pass with precision, pace and calm authority.
Deputise for the Head Chef when required: lead briefings, manage the brigade and ensure consistent quality across all sections.
Own mise en place standards and readiness: prep lists, batching, organisation and cleanliness to EHO-ready standards.
Drive dish consistency: follow specs, calibrate seasoning, plating and timing; run tastings and coach chefs in service.
Support menu development and specials -- contributing ideas that fit N?shi's modern Japanese/Chinese-inspired style.
Manage stock control: ordering, deliveries, rotation, waste reduction and GP targets with accurate daily/weekly counts.
Train, mentor and performance-manage chefs and KPs; set clear standards and develop talent through on-the-job coaching.
Ensure full compliance: HACCP, allergens, temperature logs, cleaning schedules and food safety documentation.
Liaise closely with FOH to pace courses, manage covers and deliver a seamless guest experience.
Care for equipment and maintenance; oversee opening/closing procedures and kitchen handovers.
What you bring
Proven experience as a Senior Sous Chef or strong Sous Chef in a premium, high-volume restaurant.
Excellent cooking technique and palette, with an eye for detail and presentation under pressure.
Confident leader who can run the pass, delegate effectively and build a positive, disciplined kitchen culture.
Commercial awareness: stock, ordering, waste control and GP management.
Thorough knowledge of HACCP, allergens and food safety (Level 3 Food Safety preferred).
Organised, calm and solutions-focused with strong communication skills.
A genuine passion for luxury hospitality and modern Asian flavours.
Right to work in the UK.
