Job Summary:
We're seeking a talented
Senior Sous Chef
to help lead our kitchen in delivering this unique culinary vision. You'll work alongside our Executive Chef and Head Chef to refine our day-to-night menus, mentor the team, and ensure every dish--from smashed avocado on sourdough to seared monkfish with native Australian spices--meets our high standards.
Key Responsibilities:
Support the Head Chef in managing all kitchen operations, ensuring consistency across breakfast, lunch, and dinner service.
Master and execute our Antipodean-British fusion dishes, balancing bold flavours with refined technique.
Contribute to menu development, drawing on Australian/New Zealand influences (e.g., native ingredients, Maori techniques) and seasonal British produce.
Train and inspire junior chefs, fostering a collaborative and waste-conscious kitchen culture.
Uphold sustainability practices, working with local suppliers and minimising food waste.
Maintain impeccable food safety and hygiene standards.
Lead the team in the Head Chef's absence, ensuring seamless service.
Qualifications & Requirements:
5+ years
in professional kitchens, with
2+ years as a Sous Chef
in modern British, Australasian, or fusion cuisine.
Passion for Antipodean flavours (e.g., familiarity with wattleseed, finger lime, horopito) and British seasonal produce.
Strong leadership skills and a collaborative, calm demeanour under pressure.
Commitment to sustainability and nose-to-tail/root-to-stem cooking.
Flexibility for split shifts (breakfast/dinner service) and weekends.
