IMMEDIATE START
An exciting opportunity has arisen for an experienced Sommelier needed to join an exclusive Michelin restaurant based in the Mayfair areas. The client is proud of their strong customer relationships and friendly atmosphere with a high focus is on delivering standards and service for their refined clientele. They are now looking for a strong senior Sommelier who has a similar funky background working in a fast paced fine dining environment.

As a Sommelier you will be responsible for:

• Recommending wine varieties to our guests
• Involved in all elements of stock control
• Create and update the wine list in coordination with chefs and the General Manager
• Organize wine tasting days
• Experience in table service from a high end fine dining/michelin restaurant
• Recommend food and wine pairings
• Ensure wines are served at the right temperature and within the proper glassware
• Inform guests about different varieties of wines and prices
• Manage wine cellar and ensure it's fully-stocked
• Training and developing staff
• Advise guests on wines based on their personal tastes and food choices
• Working under pressure
• Negotiate purchase prices with vendors
• Be able to think on your feet in order to solve problems

The Ideal candidate will be:

• An experienced Sommelier with at least two years working in a similar fine dining/Michelin restaurant, Hotel or Private members clubs
• Ability to create tasteful food and wine pairings
• Able to run busy shifts
• Be able to manage & motivate the team
• Understanding of the wine making process
• Experience in wines from around the world
• Must be flexible on running different shift patterns
• Experience working towards driving a quality service
• Focus on attention to detail
• Knowledge of local vineyards and wineries
• Dealing with senior Managers and Directors
• Certification as a Sommelier/WSET or degree in hospitality is a plus
• Passionate about quality of service & standards
• Friendly and upbeat personality

The ideal candidate will have great organisational skills along with the passion and commitment in driving excellent service to the clientele and a proven track record in a similar fine dining/Michelin restaurant, hotel or private members clubs.
