Specific duties falling within the role of Sous Chef include:
To deputise for the Head Chef in his absence
To assist in training, supervision of all kitchen staff in the preparation, cooking
and presentation of all dishes
Supervision of the preparation and service of meals as directed by the Head Chef
To follow Company Recruitment and Selection process
To attend training sessions and meetings as required
To assist in ensuring wage costs are controlled in line with business levels through weekly forecasting
To ensure laundry is not misused and is controlled within the kitchen
To be fully conversant with the food gross profit achieved and assist the Head Chef in achieving the budgeted food G.P
Use of equipment and other materials economically
To assist the Head Chef in the monitoring of standards of food production andpresentation in the kitchen
To ensure that the food hygiene regulations are always followed ensuring that the food is stored and rotated daily to eliminate wastage
In conjunction with the Head Chef to check fridges and stocks daily and to plan purchasing requirements in accordance with business demands
Assist as required with menu planning
To monitor all cleaning activities ensuring that the kitchen cleaning schedules are followed and kept to a high standard
Use cleaning agents and equipment within the perimeters of COSHH legislation
To carry out the responsibilities of the job within the perimeters of Health and Safety Legislation.
To comply with statutory and legal requirements for Fire, Hygiene, Health and Safety and Licensing Law
