Main Purpose of the Role
To assist the Head Chef in the smooth and efficient running of all food production and management of the team.
Provide leadership and motivation for the kitchen team.
To take responsibility for the organisation and delivery of all food production and management of the kitchen working with kitchen supervisors to ensure smooth running of the kitchen.
Key Responsibilities
Menu Planning and delivery
Work with head chef to produce innovative menus adapted to suit audiences and customer trends
Promote use of seasonal and local products where possible
Ensure consistent quality in all food preparation and service
Direct all food production and any other related activities in absence of Head Chef
Support in development of menu planning
. Baking skills an advantage.
Kitchen Team
Lead, inspire and motivate the team
Assist with recruitment and train staff to high standards
Be a 'hands on 'leader as part of the team , leading from the front on a daily basis
Communicate with the team through daily briefings
Be a positive leader within the kitchen and working with restaurant and events team
In absence of Head Chef create team rotas in line with budget and the needs of the business
Finance and stock control
Maintain good stock control at all times
Minimise wastage
Assist with monthly stock taking as required
Maximise opportunities to increase business levels
Work with Head Chef on all food purchasing and cost controls
Manage and record deliveries and in absence of Head Chef.
Statutory requirements
Maintain and promote the highest levels of cleanliness and food safety management in the kitchen
Ensure all food is stored, prepared and cooked in line with legal requirements
Work with Head Chef to ensure good food safety within hospitality areas
Ensure all records are kept up to date; food safety, health and safety, HACCP related documents and staff training.
Ensure all equipment is maintained and any defects reported and or dealt with promptly
Relationships
Communicate effectively with the Hospitality team to ensure smooth running of all operations
Communicate with customers when required and deal with any complaints that arise
Be available to discuss and plan menu options and develop event ideas.
Take part and contribute to management meetings.
