We are looking for a passionate and skilled Sous Chef to become a key part of our culinary team.
The Role:We are seeking a highly motivated and experienced Sous Chef to support our Head Chef in all aspects of kitchen management. This is a hands-on role for a culinary professional with a deep understanding of Asian cuisines, exceptional leadership skills, and a commitment to the highest standards of food quality and safety. You will be crucial in maintaining the smooth operation of our kitchen and will be fully responsible for its management in the Head Chef's absence.
Key Responsibilities:
Kitchen Operations & Leadership:o Assist the Head Chef in the daily management and smooth running of the kitchen.o Supervise and lead the kitchen team, ensuring all dishes are prepared to the highest standard and presented correctly.o Take full responsibility for the entire kitchen operation, including service, in the absence of the Head Chef.o Train and mentor junior chefs and commis chefs, fostering a positive and productive team environment.o Culinary Excellence:o Prepare and cook a variety of dishes with a focus on Korean BBQ, Chinese Hot Pot broths, and complementary Asian cuisine.o Demonstrate expert Chinese wok skills (e.g., stir-frying, deep frying).o Execute precise and consistent knife skills for meat, vegetable, and seafood preparation.o Ensure all food meets our strict recipes, portion controls, and quality standards.o Stock & Inventory Management:o Assist with stock control, monitoring inventory levels of food and supplies.o Place accurate and timely food orders with suppliers, ensuring value for money and quality.o Manage food waste and implement cost-control measures without compromising quality.o Health, Safety & Compliance:o Uphold the highest standards of food hygiene, sanitation, and safety at all times.o Ensure full compliance with HACCP principles and all UK food safety regulations.o Maintain a clean, organised, and safe working environment for the entire team.o Hold a valid UK Food Hygiene Certificate (Level 3 or equivalent is highly desirable).
Person Specification:
Proven experience as a Sous Chef, Senior Chef de Partie, or similar role in a high-volume Asian restaurant.o In-depth knowledge and practical experience in Korean and Chinese cuisines is preferableo Exceptional Chinese wok technique and knife skills.o Demonstrable experience with stock control, ordering, and kitchen administration.o Comprehensive understanding of HACCP and a valid UK Food Hygiene Certificate.o Strong leadership, communication, and problem-solving skills.o Ability to work under pressure in a fast-paced environment while maintaining a calm and professional demeanour.o A proactive, hands-on approach and a strong team spirit.o Flexibility to work evenings, weekends, and holidays as required.
