Dario's Ristorante is part of the Owston Estate Company, a growing business with big plans for 2024 and beyond.
Dario's is a 100+ cover vibrant restaurant with attached Sala Eventi function room that can hold up to 120 people. Part of the estate which also includes the 32-bedroom country house hotel Owston Hall and championship golf course. The hotel has plans to develop a brand new state of the art Spa & wellness centre as well redevelopment of all bar, restaurant and function space in the coming months.
Job Overview
We are seeking a highly motivated and experienced chef to join our team in the capacity as Sous Chef. As a Sous Chef, you will be responsible for the kitchen in the absence of the Head Chef team and will also assist them on a daily basis with ensuring the high standards of kitchen are adhered to.
The Sous will need to be able to maintain the smooth running of the kitchen alongside the Head Chef following instructions from Chef Patron. We are looking for someone on a Senior Level experienced within the role in a similar environment for at least 2/3 years - it is essential to be experienced with fresh & seasonal produce, pasta making, and have a stable career path, to be considered.
The ideal candidate will:
Ensure the consistent smooth running of the back of house department.
Develop a menu alongside the Head Chef and Chef Patron.
Ensure effective control of stock purchasing, receipt, storage, preparation, and service with regard to quality, quantity, and safety.
Maintaining a high level of food quality and production.
Ensure that the food operations are controlled in a manner that reaches the desired cost of sales and maximising potential and optimising resources.
Ensuring the security of all foods, chemicals, and equipment by maintaining procedures laid down by the Health and Safety Policy.
Organise orders.
Complete the staff rotas.
Ensure all Training & Development is completed together with health & safety regulations.
