To support the smooth running of the kitchen by preparing, cooking, and presenting dishes to a high standard. The Sous Chef will work closely with the kitchen team to deliver consistent quality during busy service, while maintaining excellent hygiene and safety practices.
Key Responsibilities
Prepare and cook menu items under the direction of the Head Chef.
Assist with daily prep, ensuring readiness for service.
Keeping your station clean, organised, and service-ready
Bringing energy, care, and attention to every plate
Learn and contribute to the preparation of authentic Persian dishes.
Maintain a clean, organised, and safe workstation at all times.
Support smooth service by communicating effectively with colleagues in the kitchen and FOH.
Adhere to all food safety, hygiene, and health & safety standards.
Manage stock rotation and assist with deliveries where required.
Contribute to menu development ideas when appropriate.

Skills & Experience Required
Previous experience working in a professional, fast-paced kitchen.
Relevant chef qualifications or formal training.
Ability to work under pressure and manage multiple tasks during service.
Initiative and confidence to get stuck in during busy times and ability to take direction.
Ensure compliance with food safety regulations and quality standards
Manage inventory and control food costs
Strong teamwork and communication skills.
Eagerness to learn and adapt to new cuisine styles.
Reliability, cleanliness, and pride in maintaining high standards.
Experience cooking Middle Eastern/ Persian cuisine is essential.

Shifts:
Mix of day, evening, and weekend shifts; overtime available.
Location:
On-site in Edinburgh (EH3); ability to commute or relocate is required.
