Managing all daily kitchen activities, including overseeing staff, aiding with menu preparation, ensuring food quality and freshness, and monitoring ordering and stocking. Provides meal quality and consistency by following designated recipes and standards to exceed customer expectations and provide a memorable experience.
Key responsibilities
Manage and deliver excellence in the general day to day running of the kitchen.
Leading a team of chefs in cooking and preparing meals, including checking food quality and overseeing cooking techniques ensuring that the highest standard is always provided
Empowering junior chefs to develop to the highest standards O
Ensuring the kitchen meets high standards of quality at all times.
Completing food hygiene documents to comply with the law and writing environmental health reports when necessary (HACCP
Managing the kitchen staff, including setting the rota, and handling disciplinary and HR issues in the absence of the Head Chef.
Being the voice of the kitchen when communicating with waiters and bar staff.
Ordering supplies as needed to service the department.
Checking goods received for the Kitchen, checking quality quantity, signing delivery dockets and updating Procure Wizard on a daily basis.
Managing inventory and keeping control of stock.
Organising produce and ensuring strict adherence to food hygiene regulations.
Supervising all food preparation to ensure that every dish is delivered to the highest standard.
Be aware and comply with company policy regarding: Fire, Health Safety, Hygiene, Food Hygiene, Customer Care Security
Deal with any customer complaints in a professional manner and to notify Management of these.
Maintaining a high level of appearance and personal hygiene standards at all times.
Skills, Knowledge and Experience required:
Minimum experience of 2-3 years previous hotel/hospitality work experience as Sous chef level.
Completed Hospitality/ Travel/ Tourism qualification at Diploma level.
Level 2 or 3 Food Safety (HACCP).
Ability to communicate with employees, solve multiple problems at the same time, set up priorities, organize work and make certain decisions.
Excellent communication skills and people management.
Excellent customer care and complaint handling skills.
Excellent presentation and appearance.
Ability to deliver quality and standards.
Ability to work flexible shifts.
Experience of dealing with budgets, forecasts and quality standards.
Proficiency with computers and computer programs, including Microsoft Word, Excel and Outlook
