New Lanark Mill Hotel is unlike any other in Scotland. Originally an 18thcentury cotton mill, we offer 38 spacious and stylish bedrooms that combine traditional charm with modern convenience. We are owned and operated by New Lanark Trust an independent Scottish Charity which is responsible for the ongoing conservation and promotion of New Lanark World Heritage Site.

Who we are looking for:


As a senior member of the kitchen team, you will ensure food is prepared and cooked to a high standard on a daily basis. You will have an eye for detail with an organised approach to your day ahead and show enthusiasm for cooking. You'll be able to stay calm under pressure and thrive from being part of a busy kitchen environment. You'll be passionate about food and committed to great service delivery. You'll lead and develop a team giving support on a daily basis. You'll need to have a flexible approach.

What you'll need:



Experience in this role or similar Enthusiasm and flexibility Display a professional and courteous attitude Ability to work on your own but also an effective team player Good time management and ability to work under pressure An excellent eye for detail Good communication skills

Key responsibilities:



oAssists the Head Chef in preparing and managing staff rosters, holiday and sickness leave.

oEnsures all assigned staff adhere to food hygiene regulations and the Health and Safety policies in place at all times

oAssists the Head Chef with refreshing menus at regular intervals and collaborates with the F&B Manager and General Manager on the implementation of any new menu, including the provision of detailed food costings.

oResponsible for the food preparation and cooking within the hotel kitchen, ensuring recipes are followed consistently to keep the quality and cost constant.

oAssists the Head Chef in meeting and exceeding the company Food GP budget.

oAssists the Head Chef in ensuring all kitchen staff are trained on dish specification and how to achieve food margins.

oDeputises in the absence of the head chef

oResponsible for developing and implementing Minimum Departmental Standards for kitchen activities.

oUndertakes training, where required, relevant to job role.

oAdheres to Health and Safety policies that are in place, at all times. Ensures awareness of the risk assessments, method statements and training requirements relating to the role.

oFrom time to time, undertakes other duties as may reasonably be requested

Salary: 13.50 - 15.00 an hour

10 hour shift 8 hour shift Monday to Friday Weekend availability
