We are excited to announce an opportunity for an experienced and dynamic Sous Chef to join our established kitchen team at The Ship Hotel, Leigh-On-Sea. As our second-in-command, you'll play a crucial role in leading our kitchen operations and maintaining our tradition of exceptional dining experiences.
In this rewarding senior position, you will work closely with the Head Chef to oversee all aspects of kitchen operations, from menu execution to team development. You'll lead by example, inspiring our kitchen brigade whilst ensuring consistently outstanding food quality and efficient service across all meal periods.
Your Day-to-Day as Sous Chef:
Supervise and coordinate kitchen operations in the Head Chef's absence
Lead and mentor the kitchen team, providing training and guidance to junior chefs
Oversee food preparation, cooking, and presentation across all services
Ensure all dishes meet our exacting quality and presentation standards
Manage kitchen workflows during busy service periods
Assist with menu planning, recipe development, and seasonal offerings
Monitor stock levels, manage ordering, and control food costs
Maintain exemplary food safety, hygiene, and health & safety standards
Conduct quality checks and ensure consistency across all dishes
Foster a positive, professional kitchen culture
Assist with kitchen equipment maintenance and supply management
Drive continuous improvement in kitchen efficiency and standards
What We're Looking for:
Proven experience as a Sous Chef or Senior Chef de Partie in a busy kitchen
Strong leadership and team management skills
Comprehensive knowledge of kitchen operations, food preparation techniques, and cookery methods
Experience in high-volume catering environments essential
Level 2 Food Safety Certificate (Level 3 preferred)
Excellent communication, organisational, and problem-solving abilities
Ability to work efficiently under pressure and lead during peak service
Flexible availability including early mornings, evenings, and weekends
